I am on a path of complete recovery from eating foods that my body simply can’t and won’t tolerate. J.J. Virgin has a diet that for most everyone not only promises to help you lose weight and lose it fast, but if you follow the forbidden food list and never introduce them into your diet for 21 days, you’ll lose not only weight but you’ll gain your life back.
For me, I was desperate. I was getting ready to ask my doctor to test me for early onset of Alzheimer’s. I had had a psych evaluation about five years ago, but was getting ready to set up another because I was feeling physically miserable but all tests were coming back “normal.” My normal was pretty much crippling pain, constant headaches, my allergies were out of control, my skin – and mind you I’m 56, was so broken out in acne, it went to my shoulders and upper arms. Using Pro-Active helped a great deal, but seriously? Wrinkles and pimples?! Seriously? I was on the edge of despair.
Then in January 2013 I happened to by accident see an ad for “The Virgin Diet.” I never, ever, ever look at, click on or even pay attention to anything that has the word “diet” in it. My experience as been, they’re gimmicks and sure, they’ll help you lose weight, but you won’t keep it off (with the exception of Weight Watchers).
So when I clicked on that link it was a God-thing. J.J. Virgin listed symptoms that sounded like she had asked me to fill out a questionnaire with all of my health complaints and then wrote a book about me.

The thing of it is, I wasn’t just “tolerating” these symptoms three for four days a week. Almost every single one of these symptoms was happening to me all the time. This was my life seven days a week, 24/7. All except the depression – which I was fast beginning to believe was inevitable given my continuous symptoms that no test could find an organic reason for.
I removed the HI FI foods Virgin suggests are the most common intolerant foods:
Sugar and all artificial sweeteners
And my life was changed. Within 48 hours my skin began to clear up. Within 72 hours, my pores got much smaller and my allergy symptoms dimished to my need to take four allergy meds twice per day to taking one once a day. My headaches and stomach problems by weeks end reduced by at least 1\2. The fog in my brain almost visibly lifted practically immediately. It was as if a veil was being removed from my eyes.
I have remained on the diet now – stage one of it, never planning on reintroducing any of those foods again as I write this in August 2013. I don’t ever plan on going back. It’s such a fantastic difference in my health that I rarely ever am even tempted by the foods that were literally killing me.
I feel ten or more years younger and I’ve been told more than once “Wow, your skin looks fantastic!” Or, "You do not look your age." To a 56 year old Nana, that's mana from heaven...
So as a fanatical Virgin Diet believer in eliminating foods that are giving many of us problems we can’t put our finger on, I am sharing a simple recipe with you today that you can make for family and friends. And folks - they’ll never know it’s for a “special diet.” It’s so simple you’ll be shocked. You can use this recipe in stage 1 of the diet.
I like to call it:
2lbs. Grass fed beef
Non dairy Egg substitute: equivalent to two eggs
Extra Virgin Olive Oil
Salt & Pepper
Substitute for bread crumbs or gluten free bread crumbs.
Fresh lemon juice
You could substitute bison meat or buffalo meat (I found buffalo meat is much more expensive though). I get my grass fed beef from a local Michigan farmer Egly Land and Cattle Company.
I can testify, it’s true. Grass fed, humanely treated and humanely killed beef is the best. The people at Egly were wonderful to deal with too.
So get your two pounds of lean grass-fed beef, put it in a big bowl.
In a separate smaller bowl, mix egg substitute. I’ve pictured one I use, but any egg substitute will do if it doesn’t contain the HI FI foods.
If you do use the one I have pictured, warning, it will stink. I was shocked by the smell. However, it does act exactly like eggs when water is added according to directions and the food’s taste or smell won’t be affected once it is mixed in and cooked. I used the equivalent to two eggs according to package instructions. Set it aside and you'll see the mixture become egg-like.
Add another filler like breadcrumbs, but only if they are gluten free bread crumbs (which I have not found yet but you can of course make your own with gluten free bread).
I used something we Virgin Diet people can eat like the Almond meal flour pictured or flaxseed meal. I threw about two tablespoons in of the Almond meal flour.
Add the egg substitute.
Add about a tablespoon of Extra Virgin Olive Oil
Salt and Pepper to taste.
Get your hands in that bowl and mix it up. You’ll feel the consistency change when you’ve really mixed it well. It should be smooth and a little sticky.
Form your loaf and put it in your pan, put some chopped garlic on top, drizzle a little more olive oil over it, squeeze some lemon juice on the top – [use a few squirts of the plastic bottle lemon juice or one half of a medium fresh lemon]. Then get an approved organic bottle of spaghetti sauce and pour it over your meat loaf. Bake at 350 degrees for at least an hour or until the meat is no longer pink in the middle. Cooking time will vary according to your oven.
Right out of the oven I pour Daiya “deliciously dairy free” mozzarella style shreds over the top and you have yourself one heck of an Italian meat loaf. Salute!
